Soil: Marine origin, medium texture soil with high tips of clay, sand and limestone and presence of fossil shells that testify to the ancient existence of the sea
Breeding system: Simple inverted - Guyot. Certified organic farming with use of organic fertilizers and manure
Exposure: North - North East
Yield: 30 quintals of grapes per hectare
Processing: manual harvesting of grapes, vinification in steel at controlled temperature. Soft two-step pressing of the grapes (only flower must for about 35% of the yield). Static settling of the must and fermentation with selected yeasts in low temperature steel. After the first lees are removed, they remain on the noble lees until the bottling, that will take place in the following spring. Then it continues to matures in the bottle for at least 6 months
Color: Straw yellow
Bouquet: On the palate it is fresh, floral, fruity with aromas of citrus, peach and white flowers
Taste: good structure with a lively acidity, pronounced savoury and a pleasant mineral note that adds complexity to the wine
Combinations: dishes based on vegetables and seafood, but thanks to the balance between sweetness and acidity, can be combined with acidic, sweet and spicy dishes
